Monday March 9th

I made vegan french toast for dinner on Monday. Delicious!!! Drew, Anna and Shawn liked it!!! I doubled the recipe below but it only made about 6 toasts. Next time I am going to triple the recipe. And I used almond milk instead of soy milk. Probably make this when Faith comes down!!

French Toast
1/2 cup soy milk
3 Tbsp. unbleached flour
1/4 tsp. cinnamon
1 tsp. vanilla extract
4 slices whole-wheat
maple syrup

• Whisk together the soy milk, flour, cinnamon, and vanilla.
• Dip the bread in the batter, turning it to coat both sides, then cook it until golden brown in a nonstick skillet.
• Serve with maple syrup.
Makes 2 servings
