weekend recap
GREAT weekend!! Had some friends over Friday night. I tried a new recipe, beet pesto. DELICIOUS!! I added about 1/4 cup more oil than the recipe stated, next time I am going to add four garlic cloves to the mixture. Everyone else seemed to like it too! Trying new recipes always make me a little nervous. Thinking about playing around with the recipe and trying it with a pound of sweet potato instead of beets. Love sweet potatoes! After dinner we played Farkle, it's my new favorite game!! I played it with Julie and her husband last weekend when I was up in Minnesota. Game of chance and gamble. To roll again or not!

On Saturday I biked 63 miles around Muenster and the surrounding cities. Last year Muenster Metric Century Bike Rally was my first ever 63 bike ride. It's a tough ride, the hills come coming and coming and giving and giving. This year it did not seem as tough as last year but some of those hills felt like I was going straight up. Finished in 4 hours and 45 minutes, very happy with that time!! I stayed house for the rest of Saturday and all Sunday. Didn't get in my car once. Just laid around watching The Wire season 5, reading Flirt by Laurell Hamilton and eating lots of sugar cookies. Why does the weekend go by so quickly and the weekdays seem to drag on & on?

Lancaster Country Ride
This morning was my first 63 mile ride of the year and it was a tough one! The wind was strong. The ride started a little after 9am then finally finished around 2:30pm, half an hour before the course would close. It has NEVER taken me that long before. Luckily the view was beautiful!! The bluebonnet (Texas State flower) was in full bloom!

Challenge: to bike every day in April
Just signed up for the 30 Days of Biking!! My ankle is still sore for the 15.5 mile trail run on the 6th. No biking or running since then, I am getting a little antsy. The Shiner 100 mile bike ride is May 7th. A little worried, I want to be able to do the ride. I have to ride this weekend, see how it see. My fingers are crossed.

Saturday April 24th
Last Saturday I biked the farther I have ever biked, 63 miles!! Went to Muenster, TX for an orgazined ride, It was intense, brutual, amazing!!! Fighting the wind the whole time, the hills kept coming and coming and giving AND GIVING, sun was beating down. LOVED IT!! Kept a 12mph pace, I would trying to bump it up to 15mph. From now to the end of August, I am going to try to bike in at least two rides/tours/rallies a month. April 17th I did a ride too in Mount Vernon, 45 miles. Compared to Muenster, Mt Vernon was a Sunday stroll in the park. (laughing)Freakin' out a little bit today. So much to do but only 4 months. Planning a trip up to Portland in May, check out apartments and take a bike tour around Portland (http://pedalbiketours.com/). Everything will be fine, just have one of those days.

Went to a Rangers game on Sunday with a few friends and coworkers. Tailgated before the game, talked during the game, great times!!
