Tonight at midnight!!

Shawn and I are going to the midnight showing of Wolverine tonight!! I love going to midnight showing. The crowd is usually more into the movie, more cheering and clapping.

Roadtrip to Austin

Sara and I took a roadtrip to Austin this weekend. I love roadtrips. Watching the scenic, chit-chatting, exploring new cities, trying new food, walking around.... I love it all!!I love how walkable Austin is! Sara and I walked from downtown to UT Austin (which is like the U of M campus). Then we went vintage store shopping along Congress Ave. People were outside on Saturday walking and biking. Loved it!! Dallas is not a very walkable city.My new tattoo!!! I got it at True Blue in Austin.

Flight of the Conchords

Flight of the Conchords are going to be in town May 5th and I got a ticket!!! When I went to ticketmaster.com two weeks ago and the tickets were sold out. :( Putzing around the internet today, decide to check out ticketmaster.com. Some seats opened up for the show!! I am super excited!! Their show is hilarious, its a smart comedy!!!

Monday Night Dinner

Last night I made Agave Mustard Balsamic Vinaigrette Marinated Grilled Portobello Burgers for Shawn and I. A sandwich for Shawn and a salad for me. I cooked Shawn's portobello on the Foreman. He said it was good, a little sweet. I cut up the portobello mushroom before marinating then warmed it up on the skillet with an unripe avocado for around 10mins. Put it on top of spinach and 1/2 tomato. MMMM!!!

Quick Road Trip to Austin

Saturday morning six of us girls woke up early to help a friend move down to Austin. It was a fun road trip!! Packed up the U-Haul and on the road by 830am. Got down to Austin, unpacked the U-Haul and eating at Daily Juice by 5pm. I got the BBQ sandwich. Delicious!!!

On our way back to Dallas we stopped at Czech Bakery for a treat. A grossly delicious treat!!

Kathy and I went to Lalibela Ethiopian Restaurant on Friday night. Delicious!! It was truly one of my favorite restaurants in Dallas. We ordered the Vegetarian Combo plate and hot teas.

Made dinner last night too!! I am on a dinner-making roll!! Lately I have been using portobello mushroom caps as the 'bread' when I make sandwiches. The sandwich last night was pesto, spinach, avocado and tomato. Delicious!!! Coconut yogurt with strawberries and chocolate chips for dessert!

Wednesday Night Dinner

Yup, I did it!! I left work at 415pm, got my hair trimmed, rented Dance of the Dead from Redbox, picked up a couple items at Whole Foods then made dinner. DELICIOUS!! I am going to use both these recipes again.


Chickpea ‘tuna’ Salad
Ingredients
• 1 (16 ounce) can chickpeas, mashed
• 1/4 cup sweet pickle relish
• 2 green onions, finely chopped

Directions
1. In a medium bowl, mix the mashed chickpeas, relish, and chopped green onions

I put the chickpeas salad on spinach leaves and cut up an half of tomato. Shawn made a sandwich using toasted bread with mustard and ranch on top. There was enough for lunch on Thursday!!! For the ingredients, use the foods you usually put in tuna salad; celery, peas, red grapes, mayo, mustard, carrots, waternuts, etc.

I found the tofu fries recipe while putzing around the internet Wenesday afternoon.

Delicious!!! I thought they were good just plain. Shawn dipped his fries in ketchup and ranch. He said they tasted just like regular fries.

I am in the mood to cook tonight again. There is pesto sauce in my fridge calling my name but I do not know what to do with it. I am not in the mood for pesto and noodles. Something else. mmmm......pesto and vegetable salad. What vegetables to use? Well, I have half a day to think about it. Tonight, I am going with Jennifer to a tattoo consultation at Elm Street Tattoo parlor. I am craving another tattoo. Soon, very soon.

Thinking about maybe possible making dinner tonight

Lately I have been eating frozen meals for dinner. Very boring but I have been working late. Tonight I am thinking about maybe possible making dinner. I have a HUGE pile of statements to review by Friday. Really, I should stay but making/eating chickpea 'tuna' sandwiches with tofu fries sounds better. Last night, I made no-bake chocolate cookies. I should have some left over, unless my brother Shawn ate them all. Maybe rent Dance of the Dead (lately I have been in the zombie movie mood).

Friday April 10



This time last year in Minnesota it was cold. Here in Texas, BEAUTIFUL!! The temp was in the 80s yesterday!! I took the picture this morning while walking down the stairs leaving for work. The flower on the trees are very fragrant!!! You can smell them walking up and down the stairs.

Pancakes for dinner!!

I made vegan pancakes for dinner on Thursday. Used a recipe from The Post Punk Kitchen. Pretty good! My brother Shawn even liked them. I throw in 1/3 of a golden delicious apple and a huge handful of raisons.

Vegan Pancakes
Ingredients:

1 1/3 cups flour
2 tsp baking powder
1/4 teaspoon salt
1 cup soy or rice milk (I used almond milk)
1/3 cup carbonated water (I used Pellegrino)
1 tbsp sugar
1 tbsp vegetable or canola oil

Directions:

Preheat a griddle or frying pan over medium heat. In a large bowl, combine the flour, baking powder, and salt. In a separate bowl, mix together the soy milk, carbonated water, sugar, and oil. Combine the two and mix until combined.
Grease your griddle or pan with margarine or a little oil. Pour some batter on and flip when it is bubbling.
Serve pancakes with syrup and fresh berries. I like putting peanut butter on my pancakes. MMMM!!!

Sunday April 5th

Breakfast is my favorite meal! I love going out for brunch on the weekends with friends. I think it is the perfect way to start a day. So, I am always on the lookout for a new place to try. On Sunday, Faith, Shawn and I tried Another Broken Egg at the corner of Grand and Beckner (east side of White Rock Lake). I drive pass it every Saturday on my way to flag football. Finally decided to try it out. Delicious!! Cute neighborhood cafe!
